Useful AI does not have to be opaque, enormous, or cloud-dependent. If the same input always produces the same output, you can debug it, compose it, prove it, and ship it anywhere you can put a processor. Regulated industries need that rigor -- but so does edge inference, offline analysis, cost-sensitive batch work, and any team tired of paying for stochastic drift in production.
